Getting in the habit of boiling a dozen eggs each week is a nutritious way to get your protein for the week, eating 2 a day. I find they keep me full, are delicious and are so easy to make. Take a big pot of water and bring to a boil. Gently put your eggs in. I like to use a slotted spoon to gently land them into the pot. Boil for twenty minutes at low heat. Set a timer so you don’t forget! Once ready, drain and rinse with cold water to stop the cooking process. Enjoy!

The Sunny Side


My husband absolutely loves a sunny side egg on stir fry. It adds protein, it’s delicious and an easy way to dress up a dish. You can cook the sunny side up eggs in the same pot as the stir fry, just give them some room by halving the pan. The eggs will cook at the same rate as your stir fry so be sure to watch them, you don’t want hard eggs! Sometimes they will cook faster, so take them out in that case. It really is more about feel here.

Egg Salad

I came across this on accident, non fat Greek yogurt makes for excellent egg salad. Substitute the mayo for Greek yogurt and use whichever mustard you prefer. I use a good amount, about 1 of the single serve sizes for 3 eggs. Be sure to chill it, it needs time to marry the flavors.
